Gingerbread Men

3 oz plain flour
1 oz dark brown sugar
1/2 teaspoon ginger
1 teaspoon cinnamon
1 oz butter or margarine
1 oz golden syrup
Raisins or other decorations
Mix together flour, sugar and spices. Melt the butter or marge and golden syrup, and mix with the dry ingredients. Roll out thin and cut into people shapes, either with a cutter, or with a knife and some imagination! Put on a baking tray and put in the eyes and buttons. The traditional way is to use raisins but smarties or bits of chocolate work just as well (they melt when cooking but harden when cold). There's no need to buy expensive cooking chocolate either, just cut tiny bits off an ordinary eating bar. Make sure you push them into the dough. Bake for 10 minutes at Gas Reg 5, 375 deg F, 190 deg C.

Tradional British Gingerbread

1 lb plain flour
8 oz brown sugar
1 tablespoon baking powder
1 tablespoon ginger
6 oz butter or margarine
6 oz golden syrup or black treacle
1/2 pint milk
1 egg
This is not a flat biscuit, but a cake.

Mix together flour, sugar, baking powder and ginger. Melt the butter or marge and golden syrup or treacle. Add the milk. Beat the egg. Now combine all the ingredients, mixing very thoroughly. Pour into a well-greased and lined tin and bake at Gas Reg 3, 325 deg F, 165 deg C, for about 90 minutes, or until the centre is firm to the touch.
